Ingredients:
- 4 boneless, skinless chicken breasts (buy here)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lemon
Instructions:
-
Start by slicing the breasts in half, butterfly style. Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken breasts until they are about 1/2 inch thick. This will help tenderize the meat and ensure even cooking.
-
In a small bowl, mix together the olive oil, minced garlic, paprika, dried oregano, salt, black pepper, and lemon juice. This will be the marinade for the chicken.
-
Place the bashed chicken breasts in a shallow dish and pour the marinade over them. Make sure the chicken is well coated. Let it marinate for at least 15 minutes to allow the flavors to infuse.
-
Preheat your BBQ to medium-high heat.
-
Once the BBQ is hot, place the marinated chicken breasts on the grill grates. Cook for about 4-5 minutes per side, or until the chicken is cooked through and no longer pink in the center. You can also check the internal temperature with a meat thermometer, which should read 165°F (74°C).
-
While grilling, baste the chicken occasionally with the remaining marinade to keep it moist and flavorful.
-
Once cooked, remove the chicken from the BBQ and let it rest for a few minutes. This will help the juices redistribute and make the chicken more tender.
-
Serve the BBQ Lemon Herb Bashed Chicken Flatties with your favorite side dishes, such as grilled vegetables, rice, or salad. You can also squeeze some fresh lemon juice over the top for an extra burst of flavor.
