How to cook the perfect roast fillet of beef
What you need
- 1.5kg middle-cut thick fillet of beef
- Salt and Pepper
- Butter
- Garlic Bulbs
Method
Preheat the oven to 180C. Melt a knob of butter in a frying pan, season fillet with salt and place in the pan. Heat a large frying pan until hot. Seal the fillet on all sides until browned. Straight away transfer to a roasting tin. Place the fillet in the centre of the roasting tin, sit the whole garlic bulbs around the fillet and splash with a little oil. Roast for 25-30 minutes for medium-rare.When cooked, remove from the oven, cover with aluminium foil and leave to rest for 15 minutes then serve hot.
