Lewis Cottage Pie
A classic comfort food, Cottage Pie is hearty, satisfying, and the perfect way to warm up on a chilly evening. This version uses Lewis of Sunningdale's Minced Steak for an unbeatable depth of flavour, combined with rich gravy and a creamy mashed potato topping. It's a family favourite that's sure to please.
Ingredients:
- 500g Lewis of Sunningdale's Minced Steak
- 1 large onion, finely chopped
- 2 carrots, peeled and diced
- 2 celery sticks, diced
- 2 cloves of garlic, minced
- 2 tbsp tomato purée
- 1 tsp dried thyme
- 2 tbsp Worcestershire sauce
- 500ml Lewis beef stock
- 1 small glass of red wine (optional)
- 1 bay leaf
- 800g potatoes, peeled and cut into chunks
- 50g butter
- 100ml milk
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
Step 1
Preheat your oven to 200°C (390°F). In a large pan, brown the minced steak over medium heat. Break it apart with a spoon as it cooks. Once browned, transfer to a plate and set aside.
Step 2
In the same pan, add a bit more oil if needed and cook the onions, carrots, celery, and garlic until softened, about 5 minutes. Stir in the tomato purée, thyme, and Worcestershire sauce, cooking for another 2 minutes.
Step 3
Add the minced steak back to the pan along with the beef stock, red wine (if using), and bay leaf. Bring to a simmer, then reduce the heat and let it cook gently for 20 minutes, or until the sauce thickens. Remove the bay leaf and season with salt and pepper to taste.
Step 4
While the meat is simmering, boil the potatoes in salted water until tender. Drain well, then return to the pot. Add the butter and milk, and mash until smooth. Season with salt and pepper.
Step 5
Transfer the meat mixture to an ovenproof dish. Top with the mashed potato, spreading evenly. Use a fork to create ridges on the top. Bake in the preheated oven for 25-30 minutes, or until the potato is golden brown and the edges are bubbling.
Step 6
Let the cottage pie stand for a few minutes before serving. Sprinkle with chopped parsley for garnish. Enjoy with your favourite steamed vegetables or a simple green salad.
