The King of roast beef! 

Hung on the bone for a minimum of 3 weeks for maximum flavour and tenderness. Then boned and rolled for easy carve. 

All our meat is free range and from the highest welfare standards.

Small: 1.5kg - 1.8kg (approx)
Medium:  2kg - 2.5kg (approx)
Large: 2.5kg (approx)

Small: 4-6
Medium:  6-8
Large: 8-10

Take out of the fridge 2-3 hours prior to cooking and cook from room temperature.

Melt a knob of butter in a frying pan, season fillet with salt and place in the pan. Cook a few minutes either side to seal the meat.

Finish off in a hot oven at 180C for 60 - 160 minutes depending on size and width of joint.

Cook on a bed of celery, carrot and onion.  When the meat is cooked, rest for approximately 30 minutes.

Use the meat juices to make gravy, add <a href="">Lewis Meat Stock</a>, Red Wine and deglaze pan and then sieve for the perfect gravy.
