The King of roast beef!
Hung on the bone for a minimum of 3 weeks for maximum flavour and tenderness. Then boned and rolled for easy carve.

Take out of the fridge 2-3 hours prior to cooking and cook from room temperature.
Melt a knob of butter in a frying pan, season fillet with salt and place in the pan. Cook a few minutes either side to seal the meat.
Finish off in a hot oven at 180C for 60 - 160 minutes depending on size and width of joint.
Cook on a bed of celery, carrot and onion. When the meat is cooked, rest for approximately 30 minutes.
Use the meat juices to make gravy, add <a href="https://lewis-of-sunningdale.myshopify.com/products/beef-stock-1">Lewis Meat Stock</a>, Red Wine and deglaze pan and then sieve for the perfect gravy.
