Scottish steer beef, grass-fed, free-range, gm-free. Hung on the bone for a minimum of 21 days for maximum flavour and tenderness.

Brown off first in a frying pan with butter, salt and pepper to colour and seal meat. Then slowly roast at 140C in a fan oven covered in tin foil on a bed of celery, carrot and onion. Delicious with the Lewis Mash and Homemade Beef Gravy.
