The King of roast beef!
Hung on the bone for a minimum of 3 weeks for maximum flavour and tenderness. Then boned and rolled for easy carve.
All our meat is free range and from the highest welfare standards.
Small: 1.5kg - 1.8kg (approx)
Medium: 2kg - 2.5kg (approx)
Large: 2.5kg (approx)
Take out of the fridge 2-3 hours prior to cooking and cook from room temperature. Melt a knob of butter in a frying pan, season fillet with salt and place in the pan. Cook a few minutes either side to seal the meat.
Finish off in a hot oven at 180C for 60 - 160 minutes depending on size and width of joint. Cook on a bed of celery, carrot and onion. When the meat is cooked, rest for approximately 30 minutes.
Use the meat juices to make gravy, add Lewis Meat Stock, Red Wine and deglaze pan and then sieve for the perfect gravy.
