Take out of fridge 2-3 hours prior to cooking and cook from room temperature.
Melt a knob of butter in a frying pan, season fillet with salt and place in the pan. Cook a few minutes on either side to seal the meat.
Finish off in a hot oven at 180C for 25-40 minutes depending on preference, then serve.
